Preheat and prep
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare chicken
Trim any excess fat from the chicken breasts and cut into 1-inch wide tenders (about 1 lb total). Pat dry with paper towels.

Set up dredging stations
In a shallow bowl, whisk eggs with the milk. In a separate bowl, place flour. In a third bowl, mix breadcrumbs, grated Parmesan, paprika, garlic powder, salt, and black pepper.

Dredge chicken
Dip each chicken tender first in flour, then in the egg-milk mixture, and finally coat with the breadcrumb-Parmesan mixture. Place the coated tenders on the prepared baking sheet.

Bake chicken
Bake on a middle rack at 425°F (220°C) for 15–20 minutes, flipping halfway, until the coating is golden and the internal temperature reaches 165°F (74°C).

While chicken bakes, rinse the mixed greens and pat dry. They are ready to serve as a simple side or tossed lightly if desired.

Portion the apple sauce into small bowls. If using French fries, bake them according to their package directions until crisp and golden.
