Pancake batter

    Whisk dry ingredients

    In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until evenly combined.

    Whisk wet ingredients

    In a separate bowl, whisk milk, eggs, melted butter, and vanilla until smooth.

    Combine and rest

    Pour the wet ingredients into the dry ingredients. Stir just until combined and no large lumps remain. Do not overmix. Let the batter rest for 5 minutes.

    Prepare to cook

    Heat a nonstick skillet or griddle over medium heat and grease lightly with a small amount of butter.

    Cook pancakes

    Pour 1/4 cup portions of batter onto the hot skillet. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes until golden. Re-grease between batches as needed.

Berry sauce

    Simmer berries

    In a small saucepan over medium heat, combine berries, sugar, and lemon juice. Simmer 5 minutes, stirring occasionally until berries release juices.

    Thicken sauce

    Make a slurry by mixing 1 tablespoon cornstarch with 1 tablespoon water, then whisk into the sauce. Simmer 1–2 minutes until the sauce thickens.

Serving

    Plate and finish

    Stack pancakes on plates. Top with warm berry sauce, add pats of butter, and drizzle with maple syrup. Serve immediately.
