    Prep and boil the octopus

    Rinse the octopus tentacles. In a large pot, combine water, dry white wine, and bay leaf. Add 1 teaspoon salt and bring to a boil.

    Cook the octopus

    Carefully immerse the octopus in the boiling liquid. Lower heat to a gentle simmer and cook until the flesh is tender when pierced, about 45–60 minutes. Remove and let rest briefly.

    Make the paprika oil

    While the octopus cooks, warm the olive oil in a small skillet with minced garlic until fragrant and just golden. Remove from heat and stir in smoked paprika.

    Finish the octopus

    Slice the tender octopus into bite-sized pieces. Toss with the paprika oil, season with black pepper, and squeeze over the juice of the lemon. Drizzle a little more olive oil if desired.

    Garnish and serve

    Spread the octopus on a plate, scatter chopped parsley, and arrange thin lemon wedges around. Serve tapas-style, optionally with crusty bread.
