    Prep mussels

    Rinse the mussels under cold running water. Discard any mussels that are cracked or do not close when tapped.

    Sweat aromatics

    In a wide pot or skillet, heat the olive oil over medium heat. Add onion, fennel, and celery. Sauté until softened and translucent, about 5–6 minutes.

    Add garlic

    Add the minced garlic and cook for 30–60 seconds, until fragrant but not browned.

    Deglaze and simmer

    Pour in the white wine and bring to a gentle simmer. Let it reduce slightly for 1–2 minutes to blend the flavors.

    Steam mussels

    Add the mussels to the pot. Cover and cook until the mussels have opened, about 5–7 minutes. Stir once or twice during cooking. Discard any mussels that do not open.

    Finish

    Season with salt and pepper to taste. Give a final stir to coat the mussels in the aromatics.

    Serve

    Taste for seasoning, then transfer to bowls. Garnish with chopped parsley and serve immediately with crusty bread.
