    Prep olives

    Drain olives in a colander and pat dry with paper towels. If olives are packed in brine, rinse lightly and drain well.

    Make marinade

    In a small bowl, whisk together extra virgin olive oil, lemon juice, minced garlic, dried oregano, dried thyme, crushed red pepper flakes, and lemon zest until well combined.

    Add herbs

    Stir in chopped parsley and add the bay leaf to the marinade.

    Coat olives

    Place olives in a large mixing bowl, pour the marinade over them, and toss gently to coat all olives evenly.

    Season with salt and black pepper to taste. Toss again to distribute seasoning.

    Marinate and serve

    Let the olives marinate for at least 30 minutes (or up to 4 hours) at room temperature or in the fridge. Before serving, remove the bay leaf and transfer to a serving dish; garnish with extra parsley if desired and serve at room temperature.
