    Prepare pan and oven

    Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with olive oil or nonstick spray.

    Cook pasta

    Bring a large pot of salted water to a boil. Add elbow macaroni and cook until al dente, about 6-7 minutes. Drain well and set aside.

    Make the roux

    In a medium saucepan, melt butter over medium heat. Whisk in flour and cook 1-2 minutes until the mixture is lightly golden.

    Make cheese sauce

    Gradually whisk in milk, cooking until the sauce thickens and coats the back of a spoon (about 4-5 minutes). Remove from heat and fold in shredded cheddar until smooth. Stir in salt, pepper, paprika, and Dijon mustard.

    Bind the sauce

    Beat the egg and whisk it into the warm cheese sauce until fully incorporated.

    Combine pasta with sauce

    Add the cooked macaroni to the cheese sauce and stir until every piece is well coated.

    Spoon the mac and cheese into the prepared muffin cups, filling about 3/4 full. Top each cup with breadcrumbs and drizzle with a little olive oil.

    Bake for 15-18 minutes, until the tops are golden and set. Allow to rest 5 minutes in the tin, then remove and serve warm as tapas bites.
