    Prepare and boil pasta

    Fill a large pot with water, add a pinch of salt, and bring to a rolling boil. Add fusilli and cook according to package directions until al dente, stirring occasionally to prevent sticking.

    Reserve pasta water

    Before draining, scoop out about 1/2 cup (120 ml) of the starchy pasta cooking water and set aside in a small bowl.

    Melt butter

    In a large skillet set over medium-low heat, melt the butter until it foams lightly. Do not brown.

    Toss pasta with butter

    Drain the pasta (reserve the water). Add the drained fusilli to the skillet with the melted butter and toss to coat the noodles evenly. If the pasta seems dry, splash in a little of the reserved pasta water to loosen.

    Add Parmesan

    Remove the pan from heat and stir in the grated Parmesan cheese until the pasta becomes creamy and coated. Add more cheese if desired.

    Season

    Season with salt and black pepper to taste. Toss lightly to distribute.

    Serve

    Divide into bowls and serve warm. Offer extra Parmesan on top if kids want more cheesy flavor.
