    Make the ginger infusion by combining the grated ginger with 1 cup water in a saucepan. Bring to a gentle simmer for 10 minutes, then remove from heat and let steep for 15 minutes. Strain the liquid through a fine-mesh sieve into a clean bowl, discarding the solids.

    Return the ginger liquid to the saucepan and add the sugar. Warm gently, stirring, until the sugar is completely dissolved. Remove from heat.

    Stir in the lemon juice and the vanilla extract (if using). Allow the mixture to cool to room temperature.
