Make Ginger Syrup

    In a saucepan, combine 1 cup water and 1 cup sugar. Bring to a simmer over medium heat, stirring until the sugar fully dissolves.

    Add the sliced fresh ginger to the simmering liquid and continue to simmer for about 20 minutes to extract the flavor.

    If using, stir in 2 tablespoons fresh lemon juice.

    Remove from heat and strain the syrup through a fine-mesh sieve into a clean container to remove the ginger slices.

    Cool the syrup to room temperature, then refrigerate for at least 1 hour before using.

Assemble Ginger Ale

    For each serving, measure 2 tablespoons of the chilled ginger syrup and pour into a tall glass.

    Add 1 cup (8 oz) of cold sparkling water to the glass and stir gently to combine.
