    Chill a coupe or Nick & Nora glass in the freezer or by placing it in the fridge to ensure the finish stays crisp once poured.

    Build the base and emulsify

    In a dry shaker (no ice yet), combine vodka, fresh cucumber juice, fresh lemon juice, simple syrup, fennel pollen, grapefruit bitters, and egg white. Ensure all ingredients are measurable and ready to go before shaking.

    Dry shake

    Seal the shaker and shake vigorously for 12–15 seconds without ice to emulsify the egg white and create a foamy texture.

    Shake with ice

    Add ice to the shaker and shake again for 10–12 seconds until the mixture is well-chilled and foamy.

    Strain and serve

    Double-strain the cocktail into the chilled glass to remove ice shards and any pulp, yielding a smooth, frothy surface.

    Garnish and finish

    Garnish with a cucumber wheel on the rim and a lemon twist. If desired, lightly dust a pinch of fennel pollen over the foam to accent aroma.
