Wing Rub and Wings

Garlic Aioli Dipping Sauce

Method

Wing Rub and Oven Prep

  1. 1

    Preheat and Pat Dry

Preheat your oven to 425°F (220°C). Pat the chicken wings dry with paper towels to remove moisture for crisper skin.

  2. 2

    Make Rub

In a large bowl, whisk together olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper. Stir in lemon juice.

  3. 3

    Coat Wings

Add wings to the bowl and toss until evenly coated with the rub and oil. Let sit 5–10 minutes if time allows for deeper flavor.

  4. 4

    Prepare Baking Setup

Line a baking sheet with parchment or a rack. Arrange wings in a single layer, making sure they are not touching for even roasting.

  5. 5

    Roast Wings

Roast in the heated oven for 25–30 minutes, flipping halfway, until the skins are crisp and the meat reaches 165°F (74°C). For extra crispiness, broil 1–2 minutes at the end.

  6. 6

    Finish

Optional: squeeze a little extra lemon juice over the wings for brightness.

Garlic Aioli Dipping Sauce and Serving

  1. 7

    Prepare Aioli

In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, salt, and olive oil until smooth. Chill for at least 15 minutes to let flavors meld.

  2. 8

    Season and Taste

Taste the aioli and adjust salt or lemon juice as needed.

  3. 9

    Serve

Arrange wings on a platter with a bowl of garlic aioli for dipping. Garnish with lemon wedges or parsley if desired.
