Prepare the Remoulade
In a bowl, combine mayonnaise, Dijon mustard, hot sauce, capers, lemon juice, garlic powder, and paprika. Mix well and refrigerate until ready to use.

Prepare the Shrimp
In a shallow bowl, mix flour, cornmeal, cayenne pepper, salt, and black pepper. In another bowl, pour buttermilk over shrimp, allowing it to soak for about 10 minutes.

Coat the Shrimp
After soaking, remove shrimp from buttermilk and dredge them in the flour mixture until well coated.

Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.

Assemble the Po Boys
Slice the French bread or hoagie rolls in half. Spread a generous amount of remoulade on the bottom half, add fried shrimp, top with shredded lettuce, sliced tomatoes, and pickles. Finish with more remoulade on the top half before closing the sandwich.
