Preparation and Cooking

    Prepare the Pork

    Pound the pork loin chops to about 1/4 inch thickness. Season both sides with salt and black pepper.

    Set Up Breading Station

    In three shallow dishes, place flour in one, beaten eggs in the second, and bread crumbs in the third.

    Bread the Pork

    Dredge each pork chop in flour, shaking off excess, then dip in the beaten eggs, and finally coat in bread crumbs.

    Fry the Schnitzels

    In a large skillet, heat vegetable oil over medium-high heat. Fry the schnitzels for about 3-4 minutes on each side or until golden brown. Drain on paper towels.

    Prepare the Potato Salad

    Boil the potatoes in salted water until tender. Drain and let cool, then chop into cubes.

    Cook the Bacon

    In a skillet, cook the diced bacon until crispy. Add the potatoes to the skillet along with white wine vinegar, mustard, honey, and lemon juice. Toss to combine and heat through.

    Prepare the French Beans

    Blanch the French beans in boiling water for 3-4 minutes, then drain and toss with fresh parsley.
