Prepare the Sauce
In a large skillet or saucepan, heat olive oil over medium heat. Add chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.

Stir in crushed tomatoes, tomato paste, red wine, oregano, basil, salt, and black pepper. Bring to a simmer and reduce heat to low. Let the sauce cook for at least 30 minutes, stirring occasionally.

Cook the Pasta
While the sauce is simmering, bring a large pot of salted water to a boil. Add rigatoni and cook according to package instructions until al dente. Drain and set aside.

Once the sauce has thickened and the flavors have melded, taste and adjust seasoning if necessary.

Combine the cooked rigatoni with the Bolognese sauce, tossing to coat the pasta evenly.

Serve
Serve hot, topped with grated Parmesan cheese.
