Cook the Orzo
In a large pot of salted boiling water, add the orzo and cook according to package instructions until al dente. Drain and set aside.

Prepare the Salmon
Season the salmon fillets with salt, black pepper, and fresh rosemary on both sides.

Pan Roast the Salmon
In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets and cook for about 4-5 minutes on each side, or until the salmon is cooked through and has a nice golden crust. Remove from the pan and keep warm.

Make the Sauce
In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about 1-2 minutes until fragrant. Pour in the heavy cream, stir well, and let simmer for another 3-4 minutes until the sauce thickens slightly.

Combine Everything
Add the cooked orzo and spinach to the sauce, stirring to combine and heat through. Adjust seasoning with salt and pepper if needed.
