Method

Preparation of Mussels

  1. 1

    Clean the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Remove any beards.

  2. 2

    Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped shallots and minced garlic, and sauté until translucent.

  3. 3

    Cook Mussels

Add the cleaned mussels to the pot along with the white wine. Cover and steam for about 5-7 minutes, or until the mussels open. Discard any that do not open.

  4. 4

    Season and Garnish

Season with salt and black pepper, and sprinkle with chopped parsley before serving.

Preparation of Fries

  1. 5

    Cut the Potatoes

Peel and cut the potatoes into thin strips.

  2. 6

    Heat the Oil

In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

  3. 7

    Fry the Potatoes

Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

  4. 8

    Season the Fries

Sprinkle with salt while still hot.
