    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Rinse the chicken under cold water and pat dry with paper towels. Place it in a large roasting pan.

    Season the Chicken

    In a small bowl, mix the olive oil, minced garlic, salt, and black pepper. Rub this mixture all over the chicken, making sure to get some under the skin for extra flavor.

    Add Lemons and Rosemary

    Cut one lemon into wedges and place them inside the cavity of the chicken along with the fresh rosemary sprigs. Squeeze the juice of the second lemon over the chicken before placing the wedges inside.

    Roast the Chicken

    Place the roasting pan in the preheated oven and roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy.

    Let it Rest

    Remove the chicken from the oven and let it rest for 10 minutes before carving.

    Serve

    Serve the chicken with either frites or mixed greens as desired.
