Prepare the Quinoa
Rinse the quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Roast the Cauliflower
Preheat the oven to 425°F (220°C). Cut the cauliflower into florets and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20-25 minutes until golden brown and tender.

Fry the Eggs
In a separate non-stick skillet, heat a little olive oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up or over easy). Season with salt and pepper.

Make the Vinaigrette
In a small bowl, whisk together sweet chili sauce, rice vinegar, and soy sauce.

Assemble the Bowl
In a large bowl, combine the cooked quinoa, roasted cauliflower, sautéed carrots, and red onion. Top with the fried eggs and drizzle with the sweet chili vinaigrette. Garnish with sesame seeds.
