    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Halve the fingerling potatoes lengthwise and toss them with olive oil, salt, black pepper, rosemary, and thyme. Spread them on a baking sheet and roast for about 25-30 minutes until golden and tender.

    Grill the Asparagus

    While the potatoes are roasting, preheat a grill or grill pan over medium-high heat. Toss the asparagus with olive oil, salt, and pepper. Grill for about 4-5 minutes, turning occasionally until tender and slightly charred.

    Cook the Filet Mignon

    Season the filet mignon pieces with olive oil, salt, and pepper. Grill the steaks for about 4-5 minutes on each side for medium-rare, adjusting time as needed for desired doneness.

    Make the Béarnaise Sauce

    In a saucepan, combine shallots, white wine, and tarragon. Simmer until reduced by half. Strain the mixture into a bowl. Whisk in egg yolks and lemon juice. Place over a double boiler, whisking until thick. Gradually add melted butter, whisking until combined and creamy.

    Serve

    On each plate, arrange the grilled filet mignon, roasted fingerling potatoes, and grilled asparagus. Drizzle béarnaise sauce over the steak and garnish with additional fresh tarragon if desired.
