Prepare the Roast
Preheat your oven to 350°F (175°C). Season the beef roast with salt, black pepper, and thyme. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.

Roast the Beef
Transfer the skillet with the seared roast to the preheated oven. Roast for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let it rest for 15 minutes before slicing.

Prepare Horseradish Cream
In a small bowl, mix together sour cream and horseradish. Season with salt and pepper to taste.

Assemble the Sandwich
Slice the rested roast thinly. Split the brioche buns and layer with slices of beef. Serve with a small bowl of au jus for dipping and a generous dollop of horseradish cream on the side.
