Preparation Steps
- 1
Cook the Farro
In a medium saucepan, bring 3 cups of water to a boil. Add 1 cup of farro, reduce heat, and simmer for about 30 minutes, or until tender. Drain and set aside to cool.
- 2
Poach the Pears
In a separate pot, bring water to a simmer. Add whole pears and poach for about 15-20 minutes until soft. Remove from water, cool, and slice.
- 3
Prepare the Kale
While the farro and pears are cooking, wash and chop the kale. Massage it with a pinch of salt to soften its texture.
- 4
Prepare the Dressing
In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
- 5
Assemble the Salad
In a large bowl, combine the cooked farro, chopped kale, sliced poached pears, halved fresh figs, and crumbled feta cheese. Drizzle with the dressing and toss gently to combine.
- 6
Serve
Serve the salad immediately as an appetizer or entrée.
