Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Season and Toss
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until they are crispy and golden brown, tossing halfway through for even cooking.

Add Garlic Confit
Once the Brussels sprouts are roasted, remove them from the oven and let them cool for a few minutes. Toss them with garlic confit.

Serve
Transfer the Brussels sprouts to a serving platter, sprinkle with shaved Parmesan cheese, and serve with aioli on the side for dipping.
