    Prepare the Potatoes

    In a large pot, boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.

    Sauté Onions

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.

    Combine Ingredients

    Add the boiled potatoes to the skillet with the onions, followed by the diced corned beef. Sprinkle with salt and black pepper, and mix well.

    Cook the Hash

    Press the mixture down into the skillet and let it cook undisturbed for about 5 minutes, allowing it to crisp up. Stir occasionally, cooking for an additional 5-10 minutes until everything is heated through and crispy.

    Add Eggs (Optional)

    If desired, poach the eggs in a separate pot while the hash cooks. Serve the corned beef hash topped with the poached eggs and garnish with fresh parsley.
