Marinate the Chicken
In a bowl, mix olive oil, minced garlic, lemon juice, fresh thyme, salt, and black pepper. Add the chicken breast and marinate for at least 30 minutes.

Prepare the Butternut Squash
Preheat the oven to 400°F (200°C). Peel and cube the butternut squash. Toss it in olive oil, salt, and pepper, then spread on a baking sheet. Roast for about 25-30 minutes or until tender.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes on each side, or until cooked through and juices run clear.

Assemble the Salad
In a large bowl, combine mixed salad greens with a drizzle of olive oil, lemon juice, and season with salt and pepper to taste.

Slice the grilled chicken paillard and serve it alongside the roasted butternut squash and the seasonal salad.
