Cooking Instructions

  1. 1

    Prepare the Crab Encrusted Cod

Preheat your oven to 400°F (200°C). In a bowl, combine the crab meat, panko breadcrumbs, salt, and black pepper. Mix well. Pat the cod fillets dry and place them on a baking sheet lined with parchment paper. Brush the fillets with olive oil and then press the crab mixture onto the top of each fillet.

  2. 2

    Bake the Cod

Bake the cod in the preheated oven for 15-20 minutes or until the fish is cooked through and the crust is golden brown.

  3. 3

    Prepare the Sherry Cream Sauce

In a saucepan over medium heat, combine the sherry wine and heavy cream. Simmer for about 5 minutes or until the sauce thickens slightly. Stir occasionally and season with salt and pepper to taste.

  4. 4

    Cook the Green Beans

In a pot of boiling salted water, blanch the green beans for about 3-4 minutes. Drain and set aside.

  5. 5

    Make the Garlic Mashed Potatoes

Peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add the garlic (minced), butter, and a splash of milk. Mash until smooth and creamy. Season with salt and pepper to taste.

  6. 6

    Serve

Plate the crab encrusted cod with a drizzle of sherry cream sauce on top. Serve with green beans and a generous scoop of garlic mashed potatoes on the side.
