Cook the Soba Noodles
Bring a pot of water to a boil. Add the soba noodles and cook according to package instructions, typically 4-6 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Vegetables
While the steak is resting, slice the avocado, halve the cherry tomatoes, and shred the napa cabbage. In a large bowl, combine the soba noodles, napa cabbage, arugula, avocado, and cherry tomatoes.

Make the Thai Dressing
In a small bowl, whisk together the fish sauce, lime juice, brown sugar, chopped cilantro, and red chili flakes until the sugar is dissolved.

Assemble the Salad
Pour the dressing over the salad mixture and toss gently to combine. Top with sliced steak, crushed peanuts, and fried wonton strips.
