Remove filets from refrigerator 30–45 minutes before cooking so they come close to room temperature. Pat dry with paper towels.

Bring steaks to room temperature

Generously season both sides of each filet with kosher salt and freshly ground black pepper. Press the seasoning gently so it adheres.

Season

Heat a heavy cast-iron or stainless-steel skillet over medium-high heat until very hot, about 4–5 minutes. Add 2 tbs vegetable oil and swirl to coat the pan; oil should shimmer but not smoke heavily.

Preheat pan

Place filets in the hot pan leaving space between them. Sear, undisturbed, 2.5–3 minutes per side for medium-rare (adjust time ±1 minute for thickness and doneness preference). Tilt the pan after flipping to pool oil on one side to assist with browning the second side.

Sear filets

Lower heat to medium. Add 6 tbs unsalted butter, smashed garlic cloves, and rosemary (and thyme if using) to the pan. As the butter melts and foams, use a spoon to continuously baste the steaks with the hot butter for 1.5–2 minutes, spooning the butter over the top and around the sides to build flavor and a glossy crust. For an internal temperature of 125–130°F for medium-rare, use an instant-read thermometer inserted into the side of the steak (remove steaks from pan a few degrees before target as carryover will raise temp).

Baste with garlic butter

Transfer filets to a warm plate or cutting board and tent loosely with foil. Rest for 5–8 minutes so juices redistribute while you finish potatoes and ratatouille. Reserve butter/garlic in pan for spooning over when serving, if desired.

Rest steaks

Place peeled and cubed Yukon Gold potatoes in a large pot and cover with cold water by 1 inch. Add 1 tsp kosher salt. Bring to a boil over high heat, reduce to a simmer and cook until potatoes are fork-tender, about 12–15 minutes.

Boil potatoes

While potatoes cook, warm 1 cup whole milk with 4 tbs butter, minced garlic, and the chopped rosemary in a small saucepan over low heat until butter melts and mixture is warm. Do not boil.

Warm milk and butter

Drain potatoes well and return to the warm pot off the heat for 1 minute to dry out excess moisture. Mash potatoes with a potato masher or ricer until mostly smooth.

Drain and mash

Gradually add warmed milk-butter mixture to the mashed potatoes, stirring until you reach the desired creamy consistency. Season with an additional 1 tsp kosher salt (or to taste) and 1/2 tsp black pepper. Taste and adjust seasoning and rosemary level if needed. Keep warm until serving.

Combine and season

If using fresh eggplant, sprinkle the cubed eggplant with a light pinch of salt and let sit in a colander for 15–20 minutes to draw out bitterness. Rinse and pat dry thoroughly with paper towels before cooking.

Prepare eggplant

Heat 2 tbs extra-virgin olive oil in a medium skillet over medium heat. Add the thinly sliced onion and cook until translucent, about 4–5 minutes. Add 2 minced garlic cloves and cook 30–45 seconds until fragrant. Add the eggplant and cook, stirring occasionally, until it begins to soften and brown, about 6–8 minutes.

Sauté aromatics and vegetables

Add diced red bell pepper and zucchini to the pan and continue to cook 4–6 minutes until vegetables are tender but still hold their shape.

Add remaining vegetables

Stir in 14 oz tomatoes (crushed or diced) and 1 tbs tomato paste to deepen flavor. Add 1 tsp herbes de Provence, 1 tsp kosher salt, and 1/2 tsp black pepper. Reduce heat to low and simmer gently for 8–10 minutes to allow flavors to meld and sauce to thicken slightly.

Tomatoes and simmer

Stir in chopped fresh basil (if using), taste and adjust seasoning. If ratatouille seems too acidic, add a small pinch of sugar or a drizzle of olive oil to balance. Keep warm until plating.

Bring the 4 cups stock to a simmer in a saucepan. In a separate heavy-bottomed pan, heat 1 tbsp olive oil and 2 tbsp butter over medium heat. Add the Arborio rice and stir to coat for 1–2 minutes until edges look translucent. Add the 1/2 cup white wine and cook until mostly absorbed. Add simmering stock, one ladle (about 1/2 cup) at a time, stirring frequently and allowing liquid to be absorbed before adding more. Continue until rice is al dente and creamy, about 18–20 minutes total.

Cook risotto

Stir in 1/2 cup grated Parmesan, 2 egg yolks, 1 tsp salt and 1/4 tsp pepper. Taste and adjust seasoning. Spread the risotto in a shallow pan or sheet tray lined with parchment to a 1/2-inch thickness. Cool to room temperature, then refrigerate uncovered for at least 2 hours or overnight to set (this improves firming for frying).

When the risotto is chilled and firm, portion into four equal portions (about 3/4 cup each) and shape into compact 1-inch-thick patties. Place 1/2 cup panko in a shallow dish, 1/2 cup flour in another, and the 2 beaten eggs in a third. Dredge each patty first in flour, then egg, then panko, pressing to adhere a good crust.

Form cakes and bread

In a large skillet, heat neutral frying oil to 350°F (175°C). Fry the risotto cakes 2 at a time for 2–3 minutes per side, until deep golden and crisp. Transfer to a rack or paper towels to drain and keep warm in a low oven (200°F / 95°C) while finishing remaining cakes.

Fry cakes

Preheat oven to 425°F (220°C). Toss halved Roma tomatoes, optional whole grape tomatoes, peeled garlic cloves, and quartered onion with 2 tbsp olive oil, 1 tsp salt and 1/2 tsp pepper on a rimmed sheet tray. Roast until tomatoes are softened and lightly charred and garlic is tender, about 25–30 minutes.

Roast vegetables

Transfer the roasted vegetables to a medium saucepan. Add 1 tbsp tomato paste and cook over medium heat for 1 minute to deepen flavor. Deglaze the sheet tray with 1/4 cup dry white wine (optional) and pour into the pan. Add 2 cups stock, 2 tbsp fresh thyme, 1 bay leaf and 1/4 tsp sugar. Simmer gently for 10–12 minutes to meld flavors.

Remove the bay leaf and puree the broth with an immersion blender or in batches in a blender until smooth. For a silky finish, pass the sauce through a fine-mesh sieve, pressing to extract as much liquid and flavor as possible. Return to the pan, adjust seasoning with salt and pepper to taste, and keep warm. If you prefer a more concentrated broth, reduce over medium heat to the desired intensity, about 5–8 minutes.

Blend and finish

Pat the sea bass fillets dry with paper towels. Season both sides evenly with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper. Lightly dust each fillet with 1/4 cup total all-purpose flour, shaking off excess.

Prepare fish

Heat a large nonstick or stainless skillet over medium-high heat and add 1 tbsp olive oil and 2 tbsp butter. When the butter is foaming and the skillet is hot, add the fillets and sear without moving for 2.5–3 minutes until a golden crust forms. Carefully flip and cook the other side 2–3 minutes, or until internal temperature reaches 125–130°F (52–54°C) for medium (fish will continue to carryover cook). Spoon pan juices over the fillets. Remove fish to a plate and rest for 2 minutes. Squeeze fresh lemon over each fillet just before plating.

Cook sea bass

To plate, spoon a shallow pool (about 1/3 to 1/2 cup) of the warm roasted tomato broth onto each plate.

Place a crispy risotto cake gently in the center of the broth. Set a rested sea bass fillet atop the risotto cake.

Drizzle 1 tsp extra-virgin olive oil over the fish, sprinkle chopped basil or chives, and add microgreens if using. Serve immediately so the risotto cake remains crisp beneath the fish and the broth is hot.

Preheat the oven to 225°F (110°C). Line two baking sheets with parchment paper. Mark circles or mounds if you want uniform sizes (3–4 inch rounds) leaving space between meringues.

Prep and heat oven

Ensure mixing bowl and whisk are completely clean and dry. Separate 6 large eggs while cold; bring whites to room temperature for 20–30 minutes before whipping for better volume.

Place the 6 room-temperature egg whites in the bowl. Whisk at medium speed until soft peaks form. Add a pinch of fine sea salt and the 1 tsp vinegar (or lemon juice).

Start whipping

With the mixer running, add the 300 g granulated sugar one tablespoon at a time (or in a slow steady stream) over 5–7 minutes. Continue whipping on high until glossy, stiff peaks form and sugar feels dissolved between fingers (rub a little mixture between thumb and index—no grit).

Add sugar gradually

Gently sift 1 tbs cornstarch over the meringue and add 1 tsp vanilla extract. Fold in very gently with a spatula until incorporated, preserving volume.

Stabilize and flavor

Transfer meringue to a large piping bag fitted with a plain round or star tip (or use two spoons). Pipe mounds or disks on the prepared parchment. For a tower, make meringues in graduated sizes: about 6–8 large (3–4 in), 8–10 medium, and 12–16 small. Alternatively make consistent discs to stack.

Pipe or spoon

Bake at 225°F (110°C) for 60–75 minutes for small/medium meringues, 75–90 minutes for larger meringues, until they are dry to the touch and lift easily. Turn oven off and leave meringues inside with door closed or cracked for 1 hour to cool and dry fully to prevent cracking.

Bake and dry

Combine 4 egg whites and 200 g granulated sugar in a heatproof bowl set over (not touching) gently simmering water. Whisk constantly until sugar dissolves and mixture reaches 160°F (71°C) or feels hot and no graininess remains when rubbed between fingers (about 3–5 minutes).

Set up a double boiler

Transfer the warmed egg white mixture to a stand mixer bowl. Whip on high until it forms glossy, stiff peaks and the bowl is cool to the touch (about 8–10 minutes).

Whip to meringue

With the mixer on medium, add the 340 g softened unsalted butter tablespoon by tablespoon. If butter becomes soft and runny, chill the bowl briefly and continue. When all butter is incorporated and the buttercream is smooth, add 2 tsp vanilla extract and a pinch of salt. If desired, tint with a small amount of color gel to taste.

Add butter

Beat on medium-high until smooth and spreadable. If too soft, chill 10–15 minutes and re-whip. If too firm, beat a few seconds at low speed to soften or add 1 tsp warmed milk at a time.

Texture check

Choose a work surface covered with parchment or silicone; use a heatproof whisk or fork and two wooden spoons or rolling pins to spin sugar. Lightly oil your hands and tools with the neutral oil. Make sure no drafts are present and keep children/pets away—molten sugar is extremely hot.

Prepare tools & safety

In a small heavy saucepan, combine 200 g granulated sugar, 2 tsp light corn syrup and 2 tbs water. Stir just to combine and bring to a boil over medium-high heat without stirring. Clip a candy thermometer to the pan and cook to 300–310°F (149–154°C), the hard‑crack stage—this yields crisp glassy threads. If you want softer threads, target 290–300°F (143–149°C).

Cook sugar to thread stage

When at temperature and amber in color, remove pan from heat and let the boil settle for 15–20 seconds. Dip a whisk, fork or a small metal spoon into the syrup and flick or drizzle quickly back and forth over a clean oiled rolling pin, the back of a wooden spoon, or between two spoons to create thin threads. Work in quick 20–30 second bursts—sugar sets very fast. Catch strands on parchment or shape around a funnel/oxidized bowl to form cages or nests. If syrup begins to crystallize in the pan, discard and restart.

Make threads

Allow spun sugar to cool completely and harden (a few minutes). Handle very gently; spun sugar is fragile. Store in an airtight container briefly if not using immediately—humidity will melt strands.

Cool and handle

Choose a stable serving plate or cake board. If you piped graduated sizes, arrange the largest meringues as the base, medium in the middle and small on top. For discs, stack three or four with buttercream between layers to create a tower.

Plan tower layout

Place a dollop (about 2–3 tbs) of Swiss buttercream on the base plate and set the first meringue on it to anchor. Pipe or spread a thin, even layer of buttercream between each meringue layer to act as adhesive and add flavor. Use chilled buttercream if you need more structure.

Layer with buttercream

Tuck fresh berries between layers and along the sides as desired. Lightly dust the final tower with 1 tbs powdered sugar for a snow-kissed look. Apply small pieces of edible gold leaf or flakes sparingly if using.

Add berries & decoration

Carefully lift the spun sugar nests or threads with a wide spatula or gloved fingers and drape them over the top and sides of the tower for a gleaming, web-like garnish. Do this just before serving to avoid humidity collapse.

Apply spun sugar

Serve immediately after adding spun sugar. If you must hold the assembled tower, keep it in a cool, dry place (not refrigerated) and reapply spun sugar at the last minute for maximum effect.

In a large bowl combine 3 tbs olive oil, lemon juice, minced garlic, cumin, ground coriander, smoked paprika, cinnamon, ginger, turmeric, cayenne, 1.5 tsp salt, 0.5 tsp pepper and honey/date syrup if using. Whisk until smooth.

Make the marinade

Add the lamb pieces to the marinade and toss thoroughly so each piece is coated. Cover and refrigerate for at least 1 hour, preferably 4 hours or up to overnight for deeper flavor.

Marinate the lamb

Preheat oven to 200°C (400°F). Heat a large ovenproof skillet or Dutch oven over medium-high heat and add 1 tbs olive oil. Working in batches so you do not overcrowd the pan, sear the lamb pieces until well browned on all sides, about 3–4 minutes per batch. Remove seared lamb to a plate and set aside.

Brown the lamb

While lamb marinates or while searing, place the carrots, parsnips, potatoes and onion in a large bowl. Toss with 3 tbs olive oil, 1 tsp ground cumin, 0.5 tsp ground coriander, 0.5 tsp smoked paprika, 1 tsp salt and 0.5 tsp black pepper until evenly coated.

Prep the vegetables

Spread vegetables in a single layer on a rimmed baking sheet. Roast in the preheated 200°C (400°F) oven for 25–30 minutes, turning once, until tender and caramelized at the edges. If using one sheet and the lamb will roast in the oven too, roast vegetables on a lower rack while lamb cooks on a middle rack.

Roast the vegetables

After searing all lamb, return all pieces to the ovenproof skillet. Pour 150 ml stock into the skillet, scraping any browned bits from the bottom. Bring to a simmer on the stove for 1–2 minutes, then cover and transfer to the oven. Roast at 200°C (400°F) for 18–22 minutes, or until lamb is tender and reaches your desired doneness (internal temperature ~70°C / 160°F for medium). If lamb is thinly cut and likely to overcook, reduce oven time accordingly.

Combine lamb and finish cooking

Remove the skillet from the oven and transfer the lamb to a serving platter. Tent loosely with foil and rest for 8–10 minutes to allow juices to redistribute.

Rest the lamb

Arrange the roasted root vegetables around or alongside the lamb. Spoon any pan juices from the skillet over the lamb and vegetables. Scatter chopped cilantro and toasted nuts over the top, add lemon wedges on the side and offer harissa or chili paste if desired.

Plate and garnish

Serve warm with couscous, flatbreads or a simple green salad. Leftovers keep refrigerated for 2–3 days.
