    Preheat your oven to 400°F (200°C). Season the beef tenderloin with salt and black pepper. In a bowl, mix the Parmesan cheese and bread crumbs. Coat the tenderloin in the mixture, pressing it on to ensure it sticks.

    Cook the Tenderloin

    In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the tenderloin on all sides until golden brown (about 3-4 minutes per side). Transfer the skillet to the preheated oven and roast for about 15-20 minutes for medium-rare, or until desired doneness. Let rest for 5 minutes before slicing.

    Make Lemon Butter

    In a small saucepan, melt the stick of butter over low heat. Stir in lemon juice and cook for an additional minute. Remove from heat and set aside.

    Prepare Mashed Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water until tender (about 15 minutes). Drain and return to the pot. Add butter, salt, and mash until smooth. Adjust seasoning to taste.

    In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add seasonal vegetables, season with salt and pepper, and sauté until tender (about 5-7 minutes).
