In a large bowl, combine the shredded cabbage, carrots, red onion, and minced jalapeño. In a separate small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour the dressing over the vegetables and toss to coat. Set aside to marinate.

In a skillet over medium-high heat, cook the ground beef until browned and fully cooked, about 7-10 minutes. Season with salt and pepper to taste.

In a small bowl, combine the sour cream, smoked paprika, chipotle in adobo sauce, garlic powder, and salt. Mix well until smooth and creamy.

Warm the corn tortillas in a skillet or microwave. Place a portion of the cooked beef in each tortilla, top with spicy slaw, cotija cheese, and drizzle with smoked chile crema.
