Prepare the crust
In a medium bowl, combine almond flour and melted butter. Mix well until it resembles wet sand. Press the mixture into the bottom of a 9-inch springform pan to form a crust. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove and let cool.

Make the filling
In a large mixing bowl, beat the cream cheese until smooth. Add Greek yogurt, stevia, vanilla extract, lemon juice, and eggs. Mix until fully combined and creamy.

Combine and bake
Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula. Bake in the oven at 325°F (160°C) for 45-50 minutes, or until the center is set and only slightly jiggly.

Cool and serve
Once baked, turn off the oven and leave the cheesecake inside for an additional hour. Remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
