Prepare the Filling
In a food processor, combine sundried tomatoes, pesto, and a pinch of salt & pepper. Blend until smooth and set aside.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Remove and set aside.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic and sliced mushrooms. Cook until mushrooms are tender, about 5 minutes. Add fresh spinach and cook until wilted.

Make the Cream Sauce
Pour in the heavy cream, stirring to combine. Add the blended sundried tomato pesto mixture and mix well. Allow the sauce to simmer for 3-5 minutes until slightly thickened.

Combine and Serve
Gently fold in the cooked gnocchi into the sauce, ensuring they are well coated. Serve hot, topped with grated Parmesan cheese and additional black pepper if desired.
