Roast the Vegetables
Preheat your oven to 425°F (220°C). Chop zucchini, bell pepper, and red onion into bite-sized pieces. In a bowl, toss the veggies with olive oil, cumin, paprika, salt, and black pepper. Spread them on a baking sheet and roast for about 20-25 minutes, or until tender and slightly charred.

Cook the Turkey Sausage
While the veggies are roasting, cook the turkey sausage according to package instructions. Once cooked, slice them into bite-sized pieces.

Prepare the Spinach and Eggs
In a skillet, lightly sauté the fresh spinach until wilted. In a separate pan, fry the eggs sunny-side up or to your preference.

Assemble the Bowl
In a bowl, layer the roasted vegetables, black beans (drained and rinsed), turkey sausage, sautéed spinach, and top with fried eggs. Add sliced avocado, sprinkle cotija cheese, and drizzle with smoked chile crema.
