Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

Bake the crust
Bake the crust in preheated oven for 10 minutes. Remove from oven and let cool while preparing the filling.

Make the filling
In a large bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar, sour cream, and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just combined. Finally, fold in the seasonal fruit puree.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the oven for 50-60 minutes or until the center is set and a slight jiggle remains. Turn off the oven and leave the cheesecake in the oven for an additional hour.

Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
