Directions

  1. 1

    Prepare the Ingredients

Chop the ham, green onion, avocado, and tomato into small pieces. Cook the bacon until crispy and crumble it into pieces.

  2. 2

    Whisk the Eggs

In a bowl, crack the eggs and whisk them together with a pinch of salt and pepper until fully combined.

  3. 3

    Cook the Omelette

In a non-stick skillet, cook the bacon first until crispy, then remove and set aside. In the same skillet, pour in the whisked eggs and let them cook on medium heat. As the edges begin to set, gently lift them with a spatula to allow uncooked egg to flow underneath.

  4. 4

    Add Fillings

Once the eggs are mostly set but still slightly runny on top, add the chopped ham, crumbled bacon, white cheddar cheese, green onion, tomato, and dollops of cream cheese evenly over one half of the omelette.

  5. 5

    Fold and Serve

Carefully fold the omelette in half over the fillings. Cook for another minute until the cheese melts, then slide onto a plate. Serve with slices of avocado and choice of bread on the side.
