    Prepare the Green Chiles

    Roast the green chiles over an open flame or in the oven until the skin is charred. Once charred, place them in a plastic bag to steam for about 10 minutes. Peel off the skins, remove the seeds, and cut the chiles into strips.

    Set Up Breading Station

    In three separate shallow bowls, place the flour in the first bowl, beaten eggs mixed with milk in the second bowl, and the cornmeal mixed with salt and pepper in the third bowl.

    Bread the Chiles

    Dredge each green chile strip in the flour, shaking off excess. Dip in the egg mixture, then coat with the cornmeal mixture, pressing lightly to adhere.

    Fry the Chiles

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, fry the breaded chile strips in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

    Serve the green chile strips hot with green chile ranch for dipping.
