Prepare the Filling
In a large bowl, combine the roasted and chopped green chiles, sliced Granny Smith apples, sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the apples are well coated. Set aside.

Preheat your oven to 425°F (220°C).

Prepare the Pie Crust
Roll out your pie crust and fit it into a 9-inch pie pan. Pour the apple and green chile filling into the crust evenly.

If desired, add a lattice top or simply cover with a second pie crust. Cut slits for steam to escape if using a full crust.

Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
