Cook the Chicken
In a skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breasts with chili powder, cumin, smoked paprika, salt, and black pepper. Cook the chicken for about 6-7 minutes on each side until fully cooked. Remove from heat and let it rest for a few minutes before slicing.

Prepare the Spicy Slaw
In a large bowl, combine the shredded cabbage, shredded carrot, sliced red onion, lime juice, remaining olive oil, and a pinch of salt. Toss well to combine.

Make the Smoked Chile Crema
In a small bowl, mix together the sour cream and smoked chipotle in adobo sauce until smooth. Adjust seasoning to taste.

Assemble the Tacos
Warm the corn tortillas in a dry skillet over medium heat until pliable. Place a portion of sliced chicken on each tortilla, top with spicy slaw, a sprinkle of cotija cheese, and drizzle with the smoked chile crema.

Serve the tacos warm with extra lime wedges on the side, if desired.
