In a large pot, combine the vegetable broth, miso paste, sesame paste, soy sauce, and chili oil. Stir well to ensure that the miso and sesame paste are fully dissolved.

Bring the mixture to a gentle simmer over medium heat. Allow it to simmer for about 10 minutes to let the flavors meld.
Noodle and Topping Preparation

Cook the Noodles
In a separate pot, bring water to a boil. Add the yellow thick ramen noodles and cook according to the package instructions (usually around 5-7 minutes).

Prepare the Vegan Meat
In a skillet over medium heat, cook the minced vegan meat until browned and heated through, about 5-7 minutes. Set aside.

While the noodles are cooking, rinse the bean sprouts under cold water. Slice the scallions into thin rounds.
