Prepare the Broth

Combine Ingredients
In a large pot, combine the vegetable broth, soy sauce, sesame oil, minced garlic, and minced ginger. Bring to a simmer over medium heat.

Add Green Onions
Once the broth comes to a simmer, add the chopped green onions and let it cook for another 5 minutes to infuse the flavors.
Cook Noodles and Vegetables

Cook Ramen Noodles
In a separate pot, bring water to a boil and cook the ramen noodles according to the package instructions. Drain and set aside.

Add Spinach
Stir in the fresh spinach and cook for an additional 2 minutes until the spinach wilts.
Serve the Ramen

Combine Noodles and Broth
In serving bowls, place a portion of cooked ramen noodles and ladle the hot vegetable broth with vegetables over the noodles.

Top each bowl with sesame seeds and chili flakes to taste. Serve immediately.
