Preparing the Broth

    Make the Dashi Stock

    In a large pot, bring 4 cups of water to a boil. Add kombu (if using) and let it simmer for about 10 minutes. Remove kombu and add bonito flakes. Simmer for another 5 minutes, then strain the stock to remove flakes.

    Season the Broth

    Return the strained dashi stock to the pot. Stir in 3 tablespoons of soy sauce, 2 tablespoons of mirin, and 1 teaspoon of salt. Simmer for an additional 5 minutes to meld the flavors, then keep warm.

Cooking the Noodles and Toppings

    Cook the Udon Noodles

    In a separate pot, bring water to a boil and cook 300 grams of udon noodles according to package instructions, usually about 8-10 minutes, until they are tender. Drain and set aside.

    Prepare the Toppings

    Slice the green onions into thin rounds. Clean and slice shiitake mushrooms. In a non-stick skillet, sauté the sliced mushrooms with a bit of oil over medium heat until they are tender, about 4-5 minutes. Add the cubed tofu and sauté for an additional 2-3 minutes to heat through.

Assembling the Soup

    Combine Ingredients

    In a large bowl or serving dish, place a portion of cooked udon noodles. Ladle the hot broth over the noodles. Top with sautéed shiitake mushrooms, tofu, and sprinkle with sliced green onions.

    Tear nori sheets into small pieces and sprinkle over the soup. Finish with a sprinkle of sesame seeds for added flavor and texture.
