Prepare the Broth

    Combine Ingredients

    In a large pot over medium heat, combine the chicken or vegetable broth, soy sauce, sesame oil, rice vinegar, chili oil, grated ginger, and minced garlic. Bring to a simmer.

Cook the Meat and Vegetables

    Brown the Meat

    In a separate skillet over medium-high heat, add the ground pork or beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

    Add Vegetables

    Add the chopped bok choy or spinach and julienned carrot to the skillet with the meat. Stir and cook for another 3-4 minutes, until the vegetables are tender.

Cook the Noodles

    Prepare Ramen

    Cook the ramen noodles according to package instructions in a separate pot. Drain and set aside.

Combine and Serve

    Mix Everything Together

    Add the meat and vegetable mixture to the simmering broth. Stir to combine and let simmer for an additional 2-3 minutes.

    Serve in Bowls

    In serving bowls, place a portion of the cooked ramen noodles at the bottom, ladle the broth with meat and vegetables over the noodles. Garnish with sliced green onions, toasted sesame seeds, and chopped cilantro.
