Prepare the Broth

    Make the Base

    In a large pot, combine the chicken broth, miso paste, sesame oil, soy sauce, red chili paste, minced garlic, and grated ginger. Stir well to combine.

    Simmer the Broth

    Bring the mixture to a simmer over medium heat. Allow it to cook for about 15 minutes to let the flavors meld together.

Cook the Noodles and Toppings

    Cook the Noodles

    In a separate pot, bring water to a boil. Add the yellow wavy noodles and cook according to package instructions, usually about 4-5 minutes. Drain and set aside.

    Cook the Ground Chicken

    In a skillet over medium heat, add the ground chicken and cook until browned and fully cooked, about 5-7 minutes. Season with a pinch of salt and set aside.

Assemble the Ramen

    Combine and Serve

    In serving bowls, divide the cooked noodles. Ladle the hot broth over the noodles. Top with cooked ground chicken, bean sprouts, chopped scallions, and sprinkle with toasted sesame seeds. Serve hot.
