Shape the Mixture
Once the potato mixture is cool, use your hands to form small oval or round shapes, about 2 inches long. Place the formed croquettes on a parchment-lined baking sheet.

Set up a breading station with three shallow dishes: one with all-purpose flour, one with beaten eggs, and one with panko breadcrumbs.

Bread the Croquettes
Dredge each croquette in flour, shaking off the excess. Dip into the beaten eggs, allowing any excess to drip off, then coat with panko breadcrumbs, pressing gently to adhere. Place the coated croquettes back on the baking sheet.

Fry the Croquettes
Carefully add the croquettes in batches, ensuring not to overcrowd the pan. Fry for 3-4 minutes on each side or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
