Prep the Pork
Season the pork loin cutlets with salt and black pepper on both sides.

Breading Setup
Set up a breading station with three bowls: one for flour, one for beaten eggs, and one for panko breadcrumbs.

Bread the Cutlets
Coat each cutlet in flour, shaking off excess. Dip in beaten eggs, then coat with panko breadcrumbs, pressing gently to adhere.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until shimmering.

Fry the Cutlets
Fry the breaded cutlets in the hot oil for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

In a small bowl, combine ketchup, Worcestershire sauce, soy sauce, mirin, sugar, garlic powder, and ground ginger. Mix well until sugar is dissolved.
