Pork Katsu

    Prepare the Pork

    Season the pork loin chops with salt and black pepper on both sides.

    Bread the Pork

    Set up a breading station: one plate with flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each pork chop in flour, dip in the egg, and then coat with panko.

    Fry the Pork

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded pork chops and fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Curry Sauce

    Sauté the Aromatics

    In a large saucepan, heat a little oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until fragrant and onion is translucent.

    Add Vegetables

    Add diced carrots and potatoes to the saucepan. Stir and cook for a few minutes until they start to soften.

    Add Broth and Spices

    Stir in curry powder, soy sauce, broth, and coconut milk. Bring to a boil, then reduce heat and let simmer for 20 minutes until vegetables are tender.

Rice

    Cook the Rice

    Rinse the rice under cold water until the water runs clear. Combine rice and water in a saucepan, bring to a boil, then reduce to a simmer and cover. Cook for about 18 minutes until rice is tender.

Garnish

    Prepare the Garnish

    Chop the green onions and set aside. Toast sesame seeds in a dry skillet over medium heat until golden.

Assembly

    Assemble the Bowl

    In a bowl, serve a portion of rice topped with the curry sauce. Slice the pork katsu and place on top. Garnish with green onions and toasted sesame seeds.
