Prepare the Pork
Season the pork loin chops with salt and black pepper on both sides.

Bread the Pork
Set up a breading station: one plate with flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each pork chop in flour, dip in the egg, and then coat with panko.

In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded pork chops and fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
