    Rinse the fresh bamboo shoots under cold water to remove any dirt. Using a sharp knife, peel the outer layers of the bamboo shoots to expose the tender inner part. Cut them into thin strips or matchsticks.

    Boiling Bamboo Shoots

    In a large pot, bring water to a boil. Add the bamboo shoots and boil for about 10-15 minutes until they soften. Drain and rinse them under cold water to stop the cooking process.

    Seasoning the Bamboo Shoots

    In a large mixing bowl, combine the boiled bamboo shoots with salt, sugar, soy sauce, mirin, sake, and sesame oil. Mix well to ensure the bamboo shoots are evenly coated with the seasoning.
