Method

Preparing the Chicken Karaage

    Marinate the Chicken

    In a bowl, combine the grated ginger, soy sauce, and minced garlic. Add the boneless chicken thighs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes.

    Prepare the Breading

    In a separate bowl, mix together the cornstarch and all-purpose flour. Prepare a shallow dish with the beaten egg.

    Bread the Chicken

    Remove the marinated chicken from the refrigerator. Dredge each piece in the flour mixture, then dip it into the beaten egg, and finally coat again with the flour mixture. Set aside.

    Fry the Chicken

    Heat the vegetable oil in a deep pan over medium-high heat. Once hot, carefully add the chicken pieces and fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

Making the Japanese Curry

    Sauté the Vegetables

    In a pot, add a small amount of oil and sauté the sliced onions until translucent. Add the diced carrots and potatoes and cook for a few more minutes.

    Add Water and Curry Roux

    Pour in 4 cups of water and bring to a boil. Once boiling, reduce heat and add the Japanese curry roux. Stir until the roux is dissolved and simmer for about 15-20 minutes until the vegetables are tender.

Cooking the Rice

    Rinse the Rice

    Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a pot, combine the rinsed rice and 4 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the rice is fluffy and water is absorbed.

Preparing the Salad with Ginger Dressing

    Make the Dressing

    In a small bowl, whisk together the grated ginger, soy sauce, rice vinegar, and sesame oil until well combined.

    Assemble the Salad

    In a large bowl, toss together the mixed salad greens, sliced cucumber, and chopped tomato. Drizzle with the ginger dressing just before serving.
