Mixing the Ingredients
In a large mixing bowl, combine the ground Berkshire pork, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

Stuffing the Sausage
Rinse the sausage casings under cold water and soak them in water for about 30 minutes. Fit a sausage stuffer with the casing and fill with the pork mixture, being careful not to overstuff. Twist sausages into 6-inch links and tie off the ends.

Mixing the Mayonnaise
In a bowl, combine the mayonnaise, Sriracha sauce, rice vinegar, soy sauce, sesame oil, and honey. Whisk together until smooth and well-blended.

Taste the mayonnaise and adjust the spice level by adding more Sriracha if desired.
