Prepare Beef Marinade

    Mix Marinade

    In a bowl, combine soy sauce, mirin, sake, sugar, minced garlic, and minced ginger. Stir until the sugar is dissolved.

    Marinate Beef

    Add the thinly sliced beef to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes.

Cook Ingredients

    Sauté Onions

    In a large skillet, heat a tablespoon of oil over medium heat. Add the sliced onion and sauté until caramelized, about 10-15 minutes.

    Cook Beef

    Add the marinated beef (with marinade) to the skillet with onions. Cook for 5-7 minutes, stirring occasionally, until the beef is cooked through.

    Add Dashi Stock

    Pour in the dashi stock and bring to a simmer. Cook for another 3-5 minutes, allowing flavors to meld.

Assemble Gyu Don

    Prepare Rice

    Place cooked rice in serving bowls.

    Top with Beef Mixture

    Spoon the beef and onion mixture over the rice, ensuring to include some of the broth.

    Top each serving with pickled ginger, a soft-boiled egg, and chopped green onions.
