Preparing the Filling

    Mix the Ingredients

    In a large mixing bowl, combine the ground pork, green onions, garlic, ginger, chopped cabbage, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly combined.

    Chill the Filling

    Cover the bowl with plastic wrap and refrigerate the filling for at least 30 minutes to allow the flavors to meld.

Assembling the Gyoza

    Fill the Wrappers

    Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with a little water using your finger.

    Fold and Seal

    Fold the wrapper in half over the filling to create a half-moon shape. Pinch the edges together to seal, making sure there are no air pockets. You can create pleats along the edge for a traditional look.

    Repeat

    Continue filling and sealing the remaining wrappers until all the filling is used.

Cooking the Gyoza

    Heat the Oil

    In a large non-stick skillet, heat the oil over medium-high heat until shimmering.

    Fry the Gyoza

    Place the gyoza in the skillet, flat side down, making sure they are not touching each other. Fry for about 2-3 minutes until the bottoms are golden brown.

    Steam the Gyoza

    Pour in the water carefully, then cover the skillet with a lid. Reduce the heat to medium and steam the gyoza for about 5-6 minutes or until the water has evaporated.

    Serve

    Remove the lid and allow any excess moisture to evaporate for a minute. Serve the gyoza hot with soy sauce or dipping sauce of your choice.
